How much to tip

No tip is required. Some upscale hotels and restaurants that cater heavily to international travellers may include a service charge on the bill already.

In practice

Check the printed receipt for a service charge line before considering whether to add anything further; it is unusual to leave cash at the table.

How people actually pay

Alipay and WeChat Pay are used for the large majority of everyday payments in China, including at small restaurants and street vendors — many places no longer keep much cash on hand and some don't accept foreign cards at all. Visitors can link an international card to Alipay's tourist version, but it's worth carrying some cash as a backup, since card acceptance alone isn't reliable outside hotels and larger chains.
